Our Wines
A vineyard located on clayey limestone slopes.
A unique and prestigious terroir.
The "generic" CHABLIS are the most available wines. Clear, fresh and light, their aromas and flavours develop rapidly. They keep for 5 years and more, depending on the vintage. CHABLIS is served between 10° and 12°C as an aperitif, with oysters, seafood, snails, cold meats, goat cheese or Gruyère cheese.
The Chablis wines, which are available in 4 appellations d'origine contrôlée (AOC), are all made from the Chardonnay grape variety :
- CHABLIS Grands Crus and CHABLIS Premiers Crus,
- CHABLIS and Petit Chablis.
The original climate is mentioned in the Premiers Crus, a total of 27.
At the estate: MONTÉE DE TONNERRE, MONT DE MILIEU, FOREST, VAILLON, MONTMAINS, CÔTE DE LÉCHET.
They develop more slowly and their optimum age is between 5 and 10 years.
The wines go remarkably well with shellfish, deli meats, poultry and can be enjoyed between 10° and 13°C.
The name of the original climate is mentioned in the Grands Crus: VAUDÉSIR, PREUSUSES, LES CLOS, GRENOUILLES, BOUGROS, VALMUR, BLANCHOTS.
At the estate: VALMUR, BLANCHOTS, LES CLOS, VAUDÉSIR.
They blossom slowly and their ageing capacity is rather high: from 10 to 15 years depending on the vintage.
Their flavours are rich and persistent while their aromas are intense.
The Grands Crus go very well with fine cuisine: fish in sauce, foie gras, white meats. They are served between 11° and 14°C.
